Di paese in paese e di città in città, i costumi cambiano ma resta una costante…La Domenica è la giornata dedicata al relax, allo stare insieme e al buon cibo. Non per forza bisogna andare a pranzo fuori, spesso diventa divertente adottare un bel menù da ristorante da riproporre in casa propria.

Il menù dello chef oggi propone:
-Bucatini cozze e pecorino (piatto tipicamente romano)
-Frittura di calamari (surgelata, per rendere il tutto più veloce)
-Tartufo bianco o nero
-Vino Bianco e Caffè
Lo chef in questione è il mio ragazzo, che se rinascesse, rinascerebbe cuoco…che poi non è mica detto che non lo possa diventare. La sua è una passione, ormai in famiglia e tra gli amici e i cuoco più ambito, tira fuori dal cilindro sempre cose gustosissime e il bello è che da bravo casalingo riesce a stupirti anche se ha a disposizione pochi ingredienti, perchè l’ingrediente che mai gli manca è la fantasia. Il pranzo di oggi,non è sicuramente quello con pochi ingredienti, l’idea è quella del menù interamente a base di pesce, il classico menù che soddisfa l’appetito anche dei più affamati. Considerando che la frittura è surgelata e il tartufo è confezionato…non mi resta che parlarvi del signor primo piatto, con cozze fresche, pomodorini pachino e tanto pecorino. Pensate che pesce e formaggio litighino? Niente di più sbagliato…hanno fatto pace da anni, anche perchè questo piatto rientra nella tradizione tipicamente romana. Provare e giudicare!!!
Ingredienti per 4 persone:
500 gr di bucatini
350 gr di pachino
400 gr di cozze
4 cucchiai di pecorino
1/2 bicchiere di vino bianco
Olio
Aglio
Sale q.b.

Procedimento:
Dopo aver pulito le cozze metterle in padella a fuoco vivace con due bicchieri d’acqua in modo da farle aprire (tempo stimato 2 minuti).Conservare in un contenitore l’acqua di questa procedura,perchè la utilizzeremo in un secondo momento per completare la cottura della pasta.
Successivamente prendere una padella capiente e mettere l’olio per far soffriggere l’aglio. Aggiungere i pomodorini pachino tagliati metà e un pizzico di sale. Aspettare che perdano consistenza per aggiungere le protagoniste indiscusse: le cozze. Sfumare il tutto con 1/2 bicchiere di vino bianco. Intanto far bollire l’acqua per i bucatini e a metà cottura scolare i bucatini e riversarli nella padella del condimento…In questo modo la pasta si insaporirà per bene e diventerà un tutt’uno con il condimento. Uno dei segreti per donare a questo primo un bel sapore di mare è quello di aggiungere al condimento e ai bucatini in cottura, l’acqua che avevamo precedentemente conservato.

Prima della fine della cottura, aggiungiamo una bella spolverata di pecorino e giriamo per bene il tutto. Serviamo i piatti con un altro pò di formaggio, giusto per bellezza e gnam…un bel bavaglino al collo e sembrerà di essere in una delle più tipiche osterie trasteverine!
