…E dopo il “Dulcis in Fundo”, la seconda ricetta con la quale partecipo allo “Swiss Cheese Parade”di Formaggi Svizzeri, non poteva che sfruttare la bontà filante del Gruyère, un formaggio fondente, gustoso e perfetto per donare morbidezza alle nostre creazioni.
Con mia madre ci ha abbiamo pensato per giorni e alla fine, una mattina è arrivato il verdetto: “Armonie di pistacchio”.
La seconda proposta street food, ha un nome vagamente astratto, ricorda un pò la musica, le consistenze degli ingredienti si contrastano e si bilanciano, morbidezza e friabilità si scontrano e danno vita ad una sinfonia di gusto tutta da assaporare.
Ingredienti:
Patate (q.b.)

Pistacchi tostati salati
Gruyère
Procedimento:
Tagliare le patate a fettine rettangolari, (circa 2 cm di larghezza e 1 di spessore), tagliare il gruyere seguendo le stesse dimensioni. Per ogni “Armonia” ci serviranno 6 rettangoli di patate e 3 di formaggio filante. Disporre le patate su una teglia ben oleata e farle leggermente dorare in forno a 220° (il forno deve essere preriscaldato). Farle raffreddare e iniziare a creare le armonie. Prendere quindi 3 fettine e affiancarle tra loro, creando una superficie rettangolare, sormontare lo strato con i 3 pezzi di gruyère e coprire il tutto con altre 3 fettine di patate. Ripetere l’operazione per ogni “Armonia”. Mettere in forno le nostre creazioni ed aspettare che il formaggio si sciolga. Una volta sciolto, spegnere il forno e cospargere le “Armonie” con i pezzetti di pistacchi tostati e tritati.
Sottolineo che non dovrà esser utilizzato il sale, in quanto il gruyére e i pistacchi doneranno alle patate una salatura sufficiente.

Le “Armonie di pistacchi” si presentano pure e attente alla consistenza più che alla forma, sono più buone che belle, genuine e perfette per un pranzo a passeggio. Il primo morso è pieno di soddisfazione, ma sono i morsi a seguire che regalano felicità al palato. La sfoglia lascia spazio alla croccantezza dei pistacchi, alla morbida bontà delle fettine di patate che si confondono con il gruyère filante. Un'”Armonia”apre lo stomaco, è un po’ come la prima nota di una sinfonia musicale, la prima “Armonia” è per capire di cosa si tratta, la seconda per gradire il sapore , la terza per apprezzarla e gustarla fino all’ultimo morso.
