In cucina bisogna sperimentare, ti viene il guizzo e crei, o ti viene una voglia e copi.
Con il mio ragazzo, dopo la cenetta sarda, che vi avevo raccontato qui, ci è venuta una pazza voglia di Seadas, sognavamo proprio l’indigestione e vi assicuro che tanta era la fantasia di quel dolce mieloso e formaggioso, che alla fine abbiamo sfidato davvero la sorte.
Il bello delle Seadas è che sul momento, ti sembrano leggerissime, un morso tira l’altro e continui all’infinito…Poi però arrivi ad un punto di non ritorno e lì capisci che devi proprio fermarti!!!
La ricetta, non avendo parenti sardi, l’abbiamo presa da un’autorevole voce on line, o meglio, da un sito dedicato interamente al dolce: Seadas.it.
Ci siamo abbandonati interamente alla loro ricetta, e devo dire che alla fine il risultato è stato lodevole.
Vi riporto qui gli ingredienti consigliati dal sito e accanto vi segnalo le mie modifiche:
1 Kg di formaggio pecorino (o misto) fresco (va bene anche meno di un Kg)
1/2 Kg di semola fina di grano duro
3 uova
qualche cucchiata di strutto fresco (noi abbiamo messo 3 cucchiaiate)
scorza grattugiata di due arance
olio d’oliva
un pizzico di sale
il succo di un limone
miele sciolto a bagnomaria (noi abbiamo sfruttato l’Ambrosoli MieleSport,è già liquidissimo)
Procedimento:
Per prima cosa andiamo a preparare l’impasto, su un piano impastiamo la farina di semola con le uova. Aggiungiamo poi una cucchiaiata d’acqua, nella quale avremo sciolto un pizzico di sale, e impastiamo il tutto con lo strutto. Lavoriamo per bene la pasta, fino ad ottenere una consistenza elastica, liscia e morbida.
Mentre lasceremo riposare l’impasto, ci occuperemo del ripieno, ossia renderemo il formaggio lievemente agrumato. Andiamo quindi a grattugiare il pecorino, e la scorza delle arance, aggiungiamo poi il succo di un limone e mescoliamo il tutto.
Ora non dovremo far altro che tirare la pasta, cercando di ottenere una sfoglia sottilissima. Utilizzando una tazza, ritaglieremo quindi tanti dischetti, e distribuiremo l’impasto formaggioso sulla metà dei dischetti, andremo poi a sovrapporre i due dischi (quello vuoto e quello con l’impasto), e li salderemo insieme pressando con la forchetta (noi abbiamo fatto così ma se avete altri strumenti ben vengano!) A questo punto siamo pronti per metterle a friggere in padella (in abbondante olio d’oliva, ben caldo!). Facciamole lievemente dorare e poi miele liquefatto o zucchero e via…sono pronte per essere gustate.

Sublime bontà, sapore delicato che si scioglie in bocca, formaggio lievemente dolce e profumato, filante e gustoso…Occhio a non fare il nostro errore, sappiate frenare la vostra voglia di Seadas!!! Max 2 a testa, non di più 🙂
