Polpette gourmet vegan – Oggi inauguriamo la rubrica “In cucina con Veggy” con questa proposta facile facile. Polpette senza carne, veloci da preparare e perfette da congelare, così da sfoderarle quando si resta a corto di tempo e di idee.
Con gli stessi ingredienti potete proporle anche sotto forma di burger (in arrivo un’altra idea, easy and cool!) ed inserirle in un bel panino tondo.
Faranno gola anche agli occhi, ve lo assicuro.
Io sono una fanatica dei pomodori secchi, sarà che mi ricordano l’infanzia, hanno il sapore del sole della Calabria, mio nonno li metteva ad essiccare su lunghe tavolate e com’erano buoni.
Ecco, io sono solita metterli ovunque per donare quel gusto in più, ma potete tranquillamente aggiungere capperi, olive, funghi o ciò che più preferite.
Non avete trovato la patata dolce?! E’ un vero peccato perché il suo sapore dolciastro rende le polpette molto sfiziose, ma niente paura, sostituitela con le patate normali o magari con la zucca che sarà l’ortaggio protagonista di questi mesi.
Ingredienti per 15 polpette (oppure 10 polpette + 2 burger):
-1 patata dolce (200/250 gr)
-240 gr di ceci precotti
-6 pomodori secchi
-mezzo bicchiere di acqua
-olio evo q.b.
-curcuma q.b
-sale q.b.
-pangrattato q.b.
Procedimento:
Pelate la patata, tagliatela a pezzetti e cuocetela a vapore o mettetela in pentola a bollire.
Quando risulterà cotta frullatela insieme ad un mezzo bicchiere di acqua, ceci precotti (io utilizzo quelli nei barattoli) dell’olio, i pomodori secchi a pezzetti, sale, curcuma ed eventuali spezie a scelta.
Maneggiate le palline di impasto con le mani leggermente unte in modo da dare una forma schiacciata alle polpette.
Lasciate rapprendere in frigo e poi infornate a 180° per 30 minuti.
Ora non vi resta che lasciarle intiepidire.
Accompagnate le polpette ad una salsa yogurt e “yummy” che bontà!
